Hidden clip:
Remain idle at the main menu until the Dinoco piston cup logo appears in the bottom right corner. Press Right to highlight the logo and press Enter to see the jackelope video from The Incredibles with Mater as the jackelope.

Apple reference:
In the opening race, especially in a shot centered on the King after the big crash, notice that one of the racers is sponsored by Apple Computers. This is especially noticeable for the scenes after that pileup, because Apples do not crash.
