Hint: Shortcuts:
On the race with the castle and dirt road to the side, there will be two rock formations that your car drives under. Immediately after driving under the second formation, make a hard left turn. If done correctly, your car will pass through the wall and reach the short cut.

In the track with the castle and the dirt road to the side, if you continue past the first shortcut all the way to the tunnel and slow almost to a crawl about halfway through, there is an opening to the left. You really have to strain to turn and see it because it is on a blind left turn. If you turn into this opening, it will take you onto a private road, under the dirt road, and exit just before the finish line.
