Always win the coin toss:
Repeatedly press L1 + R1 + Start before the team captains meet with the referee.

Hint: Ultimate team:
Create a quarterback and set his stats at 100. Make his weight at about 199 and his height kind of short. Sign him to an All-Star, All-Madden 1999, NFC or AFC team and play the game in exhibition mode. You should at least have a score of 26 or higher on Rookie level.
