Switches and Soak Test options:
Press Up, Down, Left, Right(2), Left, Down, Up when the cinematic story appears at the start of the game. The message "Fight!" will be spoken to confirm correct code entry. These "Switches" and "Soak Test" options will appear at the main menu. The "Switches" option will allow one-hit kills, access to Jade, Smoke, Noob Saibot, etc. You will have to reset (hold Select + Start during game play) when using the "Soak Test" option.

Random character:
Press Up + Start at the character selection screen.

Throwing disabled:
Hold High Punch on both controllers before the match starts.

Noob Saibot:
Complete two players challenges 25 times in a row to unlock Noob Saibot.

Fight against Smoke:
During any fight in the Portal Stage, press Down + Start when the "Toasty" person appears. You will then fight Smoke.

Fight against Jade:
At the match before "?", defeat your opponent by only using Low Kick.
